Short Term Goals, High Yield Interest

A client called and said I have gotten a refund from my taxes. What should I do with it? We began to explore her goals. One of her goals is to buy a used car at the end of the year. Her target goal for the car is $20,000. She had already saved some money but with a $9,000 refund, she was very close to achieving that goal.

This is a short-term goal. Putting the money in a high yield savings account or a money market fund is the best place to put that short term money.

My Favorite Appetizer (from my Daughter-in-Law)

Ingredients

1 package of small multi-colored sweet peppers

1 tube of soft goat cheese

Balsamic Vinegar Glaze

Directions

Preheat oven to 350 F

Wash, dry and cut in half – just to the stems – open slightly

Add 1 tablespoon of soft cheese to the middle of the peppers - close

Bake at 350 F for 15 minutes

Let cool slightly and drizzle the glaze lightly over the peppers.

These are excellent at room temperature or warm.

Your guests will want the recipe – it is easy and delicious! ENJOY!
