Dear Followers,
Memorial Day Weekend – As we remember those that have gone before us in serving our great nation, we also remember those of our spouses and partners who have also gone before us. My hope for each of us as this day is set aside for remembrance, that we embrace the love and care we still have for our loved ones and know that they loved us for the rest of their lives. The memories can bring tears while yet enjoying what we had in our lives with these special people and moments.

My Experience with a Potential Scam
The example I am using this month involves myself.
I receive a voicemail (VM) on my cell phone in December. The caller left this message:
“This is the Sarasota, FL police station. You are in contempt of Court for failing to appear as an expert witness in a child abuse trial. Call me back immediately.” My heart started to pound. I do not remember receiving anything in the mail about a court appearance. I called back the person from the VM. He answered immediately. I explained to him that I did not receive a notice for a court appearance. He claimed he had all the documents with my signature on it and that I had received it.
He then began to explain that there is a large fine for being in contempt of court and that the fine can be settled with a Credit Card. I was in KY for the Christmas holidays and told him that I was not in FL at that time. He suddenly told me he had to go and get another call.
When he hung up, I immediately called the Sarasota, FL Police Department.
They had not called. They informed me that the Courts call if one has missed a Court date, not the Police Departments if one is a no show for a trial. They asked me if they requested my Credit Card information. I said “No” but they eluded to the fact that the fine could be charged to my credit card. The Police told me this scam had been going around for months. I gave them the phone number that I called. The police were happy that I called them prior to being scammed.

This Month’s Recipe
Here is a delicious recipe using Rice which is a staple in many Middle Eastern countries and a favorite dessert of mine.
Rice Pudding
1/2 cup of jasmine rice, soaked for 30 minutes and drained
2 cups water
1/4 tsp of salt
3 cups of milk or almond milk
1/3 cup sugar or maple syrup
1/2 cup of half and half or coconut milk
1/4 cup rose water (optional)
1 tsp of ground cardamon or cinnamon
1/2 cup raisins
Topping:
1 cup pomegranate arils (in season)
1/2 cup chopped raw pistachios
1/2 cup honey or maple syrup
Favorite fruit jam or preserves
Directions
For the pudding: In a medium-sized saucepan combine the rice with 2 cups water and 1/4 tsp salt. Bring to a boil and reduce the heat to low to medium. Cover and cook for 20 minutes, until the rice is tender.
Add the milk and half-and-half, sugar and bring to a boil. Reduce the heat to low, cover and cook for 55 minutes, stirring occasionally. Add rose water and cardamon, and cook over low heat for 15-20 minutes longer, or until the mixture has thickened to a pudding consistency.
For the topping: Remove the pudding from heat, spoon into individual bowls and chill. Top with a drizzle of honey or maple syrup, pistachios, and arils if in season. Some choose to top it with a fruit preserve of your choice.
The easier version is to cook everything in a slow cooker. Mix pudding ingredients and cook on low for 3-4 hours or on high for 2 hours.
The pudding will keep 4 days in the refrigerator.
